Butterscotch Buttercream

Butterscotch Buttercream

This needs no introduction. Use it liberally on cakes and cupcakes. Scoop it onto a Nilla Wafer or eat it straight from the bowl.  Give some to your voisins, and they'll love you toujours. That comes in handy when you need them to pick up all the amazon packages that inevitably come when you are out of town.  I may or may not be speaking from experience.

French lesson du jour:
Voisins: neighbors
Toujours: always

Butterscotch Buttercream

Ingredients:

1 cup Nestle Butterscotch morsels
3 Tablespoons heavy cream
1/2 cup butter, room temp
Generous pinch of kosher salt
5 cups (625 g) powdered sugar (make sure to sift if it is clumpy)
1/3 cup whole milk

Method:

Warm cream in microwave and pour over butterscotch chips.  Let sit a few minutes and then stir until melted.  Beat butter and salt in stand mixer for 2 minutes until fluffy then pour in butterscotch mixture slowly and incorporate fully.  With the mixer on its lowest setting, slowly add half the powdered sugar, then pour in half the milk.  Mix well before adding the rest of the sugar followed by the remaining milk.  Mix on medium high speed for several minutes.  Voilà!  It’s as easy as that.  If the frosting is too thick, add a little more milk.  Too thin?  Add some more sugar.⁣  Enjoy!
