Homemade Sparkling Lemonade

I am going to let you in on a little secret. I have an obsession. It's cold and bubbly and comes in a glorious glass bottle, and no, I'm not talking about champagne. Although, I do have a serious love for that as well. I'm talking about Topo Chico.
 
Is anyone with me? It is quite possibly the most refreshing drink ever. At least, that is what I thought until my oldest son asked me to make him fresh squeezed lemonade this summer. I decided to use Topo Chico instead of plain old boring water, and it was then I realized that sparkling lemonade wins the most refreshing drink award ever. It is incroyable. It will wow your guests, but to be honest, you might not want to share it with guests. In fact, just hide it in the back of your fridge for yourself. It is that good; je promets.

Homemade Sparkling Lemonade 

Makes about 3 cups/24 oz
 
3/4 cup simple syrup (recipe below)
1/2 cup fresh squeezed lemon juice
2 1/2 cups Topo Chico
 
To make the simple syrup, heat 1/2 cup sugar and 1/2 cup water on the stove over medium heat for several minutes until the sugar is dissolved, stirring gently. Allow to cool about 15 minutes.
 
Pour lemon juice into a pitcher and add simple syrup. Pour Topo Chico into pitcher and stir to combine. Chill in fridge until ready to serve. It will keep a couple days in the fridge. Enjoy!
