Simple to prepare, but very elegant looking, this chopped strawberry spinach salad with goat cheese is a cinch to make. Plus, you can interchange any berry and/or nut you happen to have on hand. Raspberries and pistachios would be lovely subsitutes, as would blueberries and sliced almonds. Whatever you choose, this beautiful salad will be ready in no time.
Ingredients
6 oz washed fresh spinach leaves
2 oz crumbled goat cheese
5 sliced strawberries
1/2 cup toasted pecans
Method
In a bowl big enough to serve the salad, use a fork and paring knife to cut the spinach into smaller bite-sized pieces. Top with goat cheese, strawberries and pecans. Toss with a small amount of my favorite vinaigrette or any light salad dressing that allows the ingredients to shine and serve immediately. Bon appetit!
